Quick Gazpacho *

A refreshing, chilled tomato-based soup with vibrant flavors of garlic, cucumber, green pepper, and a hint of spice, perfect for hot days or as a light appetizer.

Ingredients

  • 15 oz. can no salt added stewed tomatoes
  • 1 small garlic clove
  • 1/2 cucumber, peeled and seeded
  • 1/4 large green pepper, seeded
  • 1 Tbsp. red wine vinegar
  • 8 drops Tabasco sauce

Instructions

  1. Put canned stewed tomatoes in the freezer to chill while preparing vegetables.
  2. Cut peeled and seeded cucumber and green pepper into large chunks.
  3. Put undrained canned tomatoes in a food processor or blender and puree until smooth.
  4. Add garlic, cucumber, and green pepper to the blender and process until still slightly lumpy.
  5. Stir in red wine vinegar and Tabasco sauce.
  6. Cover and chill in the refrigerator until ready to serve.
