A quick and flavorful side featuring tender steamed zucchini tossed in lemon butter and topped with Parmesan cheese, perfect for light meals or healthy accompaniments.

Ingredients

  • 2 medium zucchini
  • 2 Tbsp. butter, melted
  • 1 Tbsp. lemon juice
  • 2 Tbsp. grated Parmesan cheese

Instructions

  1. Cut zucchini in half crosswise; cut each piece into 6 sticks. Place zucchini in steaming rack.
  2. Place rack over boiling water; cover and steam 3 to 5 minutes or until crisp-tender.
  3. Transfer zucchini to serving dish.
  4. Combine melted butter and lemon juice; pour over zucchini and toss gently.
  5. Sprinkle with grated Parmesan cheese.
