Ingredients

  • 1 1/2 cups edamame, cooked, shelled, cooled
  • 2 1/2 tablespoons lemon juice (freshly squeezed)
  • 2 teaspoons lime juice (freshly squeezed)
  • 2 garlic cloves, minced
  • 1 tablespoon parsley, chopped finely
  • 1/2 teaspoon salt
  • 1 teaspoon onion powder
  • 3 tablespoons plain fat-free yogurt, plain

Instructions

  1. Mix edamame, lemon & line juice, garlic, parsley, salt and onion powder in food processor or blender and blend until mixture resembles hummus (paste like). Add the olive oil and blend. Add the yogurt and stir well. Serve in a small bowl with vegetables for dipping, topped with a swirl of low sodium soy sauce.
