Ingredients

  • 1 cup cornmeal
  • 1 2/3 cups boiling water
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 cup oleo
  • 1 1/2 cups milk
  • 3 egg yolks
  • 3 egg whites

Instructions

  1. In a saucepan, add boiling water to the cornmeal and cook, stirring until it reaches a mushy consistency.
  2. Remove from heat.
  3. Add sugar, baking powder, salt, and oleo to the cornmeal mixture.
  4. Stir in milk and well-beaten egg yolks.
  5. Fold in stiffly beaten egg whites.
  6. Pour the batter into a greased 2-quart casserole.
  7. Bake at 325°F for 50 to 55 minutes.
