Egg Bake Dinner

Ingredients

  • 8 hard-boiled eggs, chilled and peeled
  • 1/4 c. mayonnaise
  • 1/4 tsp. curry powder
  • 1/2 tsp. yellow mustard
  • 1 (10 1/2 oz.) can frozen cream of shrimp soup
  • 1/2 c. grated mild American cheese
  • 1/4 tsp. salt
  • 1 c. soft bread crumbs
  • 1 (8 oz.) can chopped mushrooms, drained
  • 1 (10 oz.) can cream of mushroom soup
  • 2 Tbsp. melted butter

Instructions

  1. Cut the eggs in half lengthwise.
  2. Remove the yolks to a bowl and set the whites aside.
  3. Mash the yolks until they are the consistency of coarse corn meal.
  4. Add the mayonnaise, salt, curry and mustard.
  5. Mix all together well.
