Egg Dinner Rolls

Ingredients

  • 3 1/2 to 4 c. flour
  • 1 pkg. active dry yeast
  • 1 c. milk
  • 1/4 c. sugar
  • 1/4 c. margarine
  • 1/2 tsp. salt
  • 3 egg yolks
  • 1 slightly beaten egg yolk
  • 1 Tbsp. water

Instructions

  1. In large mixing bowl, combine 1 1/2 cups of flour and yeast; set aside.
  2. In medium saucepan, heat: stir the milk, sugar, margarine or butter and salt just until warm (120° to 130°) and margarine almost melts.
  3. Add to flour mixture, then add 3 egg yolks.
  4. Beat with electric mixer on low to medium speed for 30 seconds, scraping the sides of the bowl.
  5. Beat on high speed for 3 minutes.
  6. Stir in as much of remaining flour as you can.
  7. On lightly floured surface, knead in enough of remaining flour to make moderately stiff dough.
  8. Shape into a ball.
  9. Place in a greased bowl; turn once.
  10. Cover, let rise until double, about 1 hour.
  11. Punch down dough.
  12. Turn onto lightly floured surface. Divide in half.
  13. Then divide each half into 12 pieces.
  14. Cover and let rest for 10 minutes.
