Ingredients

  • 1 (3 oz.) can flaked coconut
  • 1/2 cup sliced blanched almonds, finely chopped
  • 3 tablespoons margarine
  • 2 envelopes unflavored gelatin
  • 1 1/2 teaspoons rum extract
  • 1/8 teaspoon ground allspice
  • 4 egg whites
  • 1/4 teaspoon salt
  • 1/3 cup sugar
  • 1 cup whipping cream

Instructions

  1. Prepare the nut pie crust.
  2. Preheat oven to 300°F (150°C).
  3. In a 9-inch pie plate, mix the flaked coconut, sliced almonds, and margarine.
  4. Press the mixture firmly onto the bottom and sides of the pie plate.
  5. Bake for about 20 minutes or until golden brown.
  6. Cool on a wire rack.
