Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/4 cup cocoa
  • 1/2 cup nuts (optional)
  • 2 cups finely grated zucchini
  • 1/2 cup oil
  • 2 teaspoons vanilla

Instructions

  1. Mix together in a large bowl the flour, sugar, baking soda, salt, cocoa, and nuts (optional).
  2. Add the finely grated zucchini, oil, and vanilla to the dry ingredients.
  3. Mix by hand until the mixture is moistened and well combined.
  4. Pour the batter into a well-greased 9 x 13-inch baking dish.
  5. Bake at 350°F (175°C) for 25 minutes, or until a toothpick inserted into the center comes out clean.
