Ingredients

  • 1/2 cup fine dry bread crumbs
  • 1 teaspoon oregano
  • 1 medium eggplant, cut into 1/2-inch pieces
  • 1/2 teaspoon garlic
  • 1/2 cup butter or margarine, melted
  • 1 (8 oz.) can tomato sauce
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix the bread crumbs, oregano, and garlic in a bowl.
  3. Dip the eggplant pieces in melted butter, then coat with the crumb mixture.
  4. Arrange the coated eggplant pieces in a single layer on a sprayed jelly roll pan.
