Gourmet eggplant dish featuring tender fried eggplant topped with rich tomato sauce and Parmesan, baked to perfection. Perfect for vegetable lovers and elegant dinners.

Ingredients

  • 1 medium eggplant
  • 1 cup oil
  • 1 cup tomato sauce
  • 2 tablespoons butter or margarine
  • 3 tablespoons grated Parmesan cheese

Instructions

  1. Cut the eggplant into 8 lengthwise parts, leaving the skins on.
  2. Fry the eggplant parts in olive oil until they are brown and tender, about 10 minutes per part.
  3. Place the tomato sauce in a casserole dish.
  4. Add the fried eggplant to the casserole and sprinkle generously with grated Parmesan cheese.
  5. Dot the dish with butter or margarine.
  6. Bake in a moderate oven at 375°F (190°C) for 15 minutes.
  7. Serve hot.
