Ingredients

  • 1 medium eggplant
  • 2 eggs
  • 1 cup Italian-style bread crumbs
  • 3/4 cup olive oil
  • 1 tablespoon Italian herb seasoning
  • 15 oz Ricotta cheese
  • 14 oz jar spaghetti sauce
  • 6 oz Mozzarella cheese

Instructions

  1. Cut the eggplant crosswise into 1/2-inch slices.
  2. Dip each slice into beaten eggs, then coat with bread crumbs.
  3. Heat olive oil in a large frypan over medium heat.
  4. Saute the eggplant slices until lightly browned, about 2 minutes per side.
  5. Drain the eggplant slices on paper towels.
  6. Preheat oven to 375°F (190°C).
  7. Layer the fried eggplant slices in a baking dish, spreading marinara sauce over each layer.
  8. Spread ricotta cheese over the top layer.
  9. Add sliced mozzarella cheese on top.
  10. Bake in the preheated oven until cheese is bubbly and golden, about 20 minutes.
