Eggs Tetrazzini

Ingredients

  • 1 (8 oz.) pkg. spaghetti
  • 2 Tbsp. olive or salad oil
  • 1 medium onion, sliced
  • 1/2 c. sliced celery
  • 1 green pepper, sliced into thin rings
  • 2 Tbsp. flour
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 1/2 c. milk
  • 6 hard-cooked eggs

Instructions

  1. Cook spaghetti according to package directions.
  2. Drain thoroughly.
  3. Heat oil in skillet.
  4. Add onion, celery and green pepper.
  5. Cook slowly for 5 minutes.
  6. Blend in flour and seasonings.
  7. Add milk and stir until thickened.
  8. Dice two of the eggs into the sauce.
  9. Pile spaghetti on hot platter.
  10. Top with hot sauce.
  11. Slice remaining eggs over sauce.
