Ingredients

  • 1 medium cabbage
  • 2 red peppers
  • 2 large onions
  • 2 c. white vinegar
  • 2 1/2 Tbsp. sugar
  • 4 carrots
  • 2 green peppers
  • 2 tsp. celery seed or celery, sliced thin

Instructions

  1. Grind or chop cabbage, carrots, peppers, and onions.
  2. Add celery seed or sliced celery and soak in salt water for 2 hours.
  3. Drain well and mix vinegar and sugar to make the dressing.
  4. Put the mixture in a covered crock, container, or big jar.
  5. Let stand in refrigerator. The longer it stands, the better it is.

Tips & Substitutions

For a crunchier texture, consider using fresh celery instead of celery seed. If you prefer a sweeter salad, you can increase the sugar slightly. To add a bit of heat, diced jalapeños or a splash of hot sauce can be mixed in. This salad can be made vegan by ensuring no animal-based ingredients are used in the dressing.

Serving Suggestions

This crock salad is excellent as a side dish for grilled meats or as a topping for sandwiches. It pairs beautifully with Korean B.B.Q. or Jerk Sauce(For Any Meat). For a light meal, serve it alongside a fresh garden salad or use it as a filling for wraps.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator. The flavors will continue to develop over time, making it even tastier after a day or two. Avoid freezing, as the texture of the vegetables may become mushy when thawed. Serve cold for the best flavor.
