Ingredients

  • 1/2 lb. dates, cut fine
  • 1 c. boiling water
  • 1 c. sugar
  • 1 egg
  • 2 Tbsp. shortening
  • 2 c. sifted flour
  • 1 scant tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 tsp. salt

Instructions

  1. Pour boiling water over dates and soak until cooled.
  2. Beat the soaked dates well once cooled.
  3. Add sugar, egg, and shortening to the date mixture and mix thoroughly.
  4. Add sifted flour, baking soda, baking powder, and salt to the mixture and stir until combined.
  5. Pour the batter into a loaf pan.
  6. Bake at 350°F (175°C) for 1 hour or until a toothpick inserted into the center comes out clean.
