Ingredients

  • 3 lb young chicken
  • spice mixture (cinnamon, cloves, cayenne, thyme, marjoram, curry, rosemary, salt, pepper)
  • 1 small onion, chopped
  • 1 stalk celery, diced
  • 1 clove garlic, minced
  • 1 carrot, sliced
  • 1 sweet potato, peeled and sliced
  • 1 white potato, peeled and sliced
  • slices of orange
  • slices of lemon
  • 1/2 cup white wine

Instructions

  1. Wash and dry the chicken.
  2. Sprinkle the inside and outside of the chicken with the spice mixture.
  3. Stuff the chopped onion, diced celery, minced garlic, sliced carrot, sweet potato, and white potato into the chicken cavity.
  4. Place the chicken in a pot, add the remaining vegetables around it, and top with slices of orange and lemon.
  5. Pour the white wine over the chicken and vegetables.
  6. Cover the pan and roast in a 350°F (175°C) oven for approximately 1 hour and 15 minutes, or until the chicken is cooked through.
  7. Allow the chicken to rest for 10 to 15 minutes before carving.
  8. Garnish with chopped parsley before serving.
