Ingredients

  • 2 lb. cooked chicken, skin removed
  • 1 lb. tomatillos, outer skins removed

  • 1 1/4 cup onion, chopped

  • 1/2 lb. grated Jack cheese
  • oil to fry tortillas

Instructions

  1. Remove chicken from bones and shred with fingers into strips.
  2. Heat tomatillos in a pan to lightly fry.
  3. Remove from heat and put in blender along with garlic and onion.
  4. Add 1/4 cup water if the mixture is too dry to blend properly.
  5. Heat oil in a pan; when hot, lightly fry (not long) tortillas in oil.
  6. Place a tortilla on a plate and fill the center with chicken and cheese.
  7. Pour approximately 2 tablespoons of green sauce on top of the chicken and cheese.
  8. Roll up the filled tortilla and place it seam side down in a baking dish.
  9. Repeat with remaining tortillas until all are filled and rolled.
  10. Top the casserole of enchiladas with remaining sauce and cheese.
  11. Bake until bubbly, about 30 minutes at 350°F.
