Ingredients

  • 1 green pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 12 oz. boiled, boned chicken, shredded
  • 1 1/2 cups salsa
  • 16 oz. black beans
  • 2 cups shredded Cheddar cheese
  • 1 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 12 flour tortillas

Instructions

  1. Fry chopped onion, green pepper, and garlic until soft.
  2. Mix in black beans (undrained), shredded chicken, 1 cup of salsa, cumin, and salt.
  3. Preheat oven to 350°F (175°C).
  4. Spread filling across the middle of each flour tortilla and sprinkle with about 2 tablespoons of shredded Cheddar cheese.
  5. Roll up the tortillas and place them in a greased 9 x 13-inch baking dish.
  6. Spread remaining salsa over the top and add the remaining cheese.
  7. Bake until the cheese melts and the burritos are heated through.
  8. Serve with sour cream.
