Enchilatos are hearty Mexican-inspired baked tortillas filled with seasoned meat, topped with chili sauce and cheese, perfect for a comforting and flavorful family meal.

Ingredients

  • 3 or 4 lb. ground meat
  • 1 bell pepper
  • 1 onion
  • 2 lb. block chili
  • 2 pkg. shredded cheese
  • 1 pkg. corn tortillas

Instructions

  1. Brown ground meat with bell pepper and onion; season to taste.
  2. Heat chili with a little water to blend.
  3. Roll the cooked meat inside tortillas and place them side by side in a baking dish.
  4. Pour chili sauce over the assembled tortillas.
  5. Spread shredded cheese over the top.
  6. Bake in a 350°F oven for 20 to 30 minutes until cheese is melted and bubbly.
