Endless Cole Slaw

Ingredients

  • 3 lb. cabbage (1 medium head), shredded
  • 1/2 green bell pepper, shredded
  • 1/2 red bell pepper, shredded
  • 1 medium onion, chopped
  • 1 c. cider vinegar
  • 1/2 c. vegetable oil
  • 1/2 c. sugar
  • 1 1/2 tsp. dry mustard
  • 1 tsp. celery seed
  • 1 tsp. salt
  • 1/2 tsp. pepper

Instructions

  1. Combine cabbage, peppers and onion in a large bowl.
  2. In a one quart saucepan, combine vinegar, oil, sugar, mustard, celery seed, salt and pepper.
  3. Bring to a boil over moderate heat, stirring to dissolve sugar.
  4. Boil 3 minutes.
  5. Pour hot dressing over cabbage mixture and toss well.
  6. Stand at room temperature 30 to 60 minutes, tossing occasionally.
  7. Cover and refrigerate for 1 to 2 days before serving.
