Eskimo Yogurt Apples
A delightful dessert featuring crisp apple shells filled with raspberry yogurt mixture, topped with whipped cream, fresh raspberries, and sliced almonds—perfect for a fruity, elegant treat.

Instructions
- Wash apples well; polish with a clean towel.
- Cut off the top of each apple; brush with lemon juice to prevent discoloration.
- Set aside.
- Carefully cut out the inside of each apple to leave a 1/2-inch shell; brush the insides with lemon juice.
- Dice the removed apple portions.
- Discard the core and seeds.
- Combine the diced apple pieces with sugar, raspberries (reserve some whole for garnish), raspberry liquor or rum, coconut, and ground almonds.
- Fold in plain yogurt into the mixture.
- Spoon the filling into the prepared apple shells.
- Top each with a dollop of whipped cream, a reserved raspberry, and sliced almonds.
- Cover with the apple tops.
- Serve immediately!
