Ingredients

  • 6 large red apples
  • lemon juice
  • 1 cup fresh raspberries
  • 2 tablespoons sugar
  • 1/4 cup raspberry liquor or rum
  • 3 tablespoons flaked coconut
  • 1/4 cup ground almonds
  • 1/2 cup plain yogurt
  • 1 cup whipped cream or topping
  • sliced almonds

Instructions

  1. Wash apples well; polish with a clean towel.
  2. Cut off the top of each apple; brush with lemon juice to prevent discoloration.
  3. Set aside.
  4. Carefully cut out the inside of each apple to leave a 1/2-inch shell; brush the insides with lemon juice.
  5. Dice the removed apple portions.
  6. Discard the core and seeds.
  7. Combine the diced apple pieces with sugar, raspberries (reserve some whole for garnish), raspberry liquor or rum, coconut, and ground almonds.
  8. Fold in plain yogurt into the mixture.
  9. Spoon the filling into the prepared apple shells.
  10. Top each with a dollop of whipped cream, a reserved raspberry, and sliced almonds.
  11. Cover with the apple tops.
  12. Serve immediately!
