Ingredients

  • 3 cups flour
  • 1 1/2 cups sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1 1/2 cups chopped walnuts
  • 1 cup raisins
  • 2 medium zucchinis, grated to 2 cups
  • 3 eggs
  • 1 cup oil

Instructions

  1. Mix flour, sugar, cinnamon, salt, baking powder, and baking soda until blended.
  2. Set aside 1/2 cup of chopped walnuts.
  3. Combine remaining walnuts with raisins and set aside.
  4. Add grated zucchini to the flour mixture and stir to combine.
  5. Beat eggs until blended.
  6. Add eggs to the flour mixture and stir until moistened.
  7. Fold in the raisin and nut mixture.
  8. Pour batter into muffin tins and bake at 350°F for 25 minutes.
