Eula's Chicken Gumbo is a hearty Southern dish with tender chicken, flavorful okra, and a rich, dark roux, perfect for comforting family meals or gatherings.

Ingredients

  • 1 stewing hen or 3 to 4 lb. chicken parts
  • 1 whole celery stalk chopped
  • 1 bunch green onions chopped
  • 1 (6 oz.) can tomato paste
  • 1 Tbsp. salt
  • black pepper
  • 2 Tbsp. parsley flakes
  • 1 tsp. minced garlic
  • 1 1/2 c. chopped okra
  • 1 1/2 c. flour
  • 3/4 to 1 c. bacon drippings or oil

Instructions

  1. Place the chicken in a large pot and cover with water.
  2. Bring to a boil and cook until the chicken is done.
  3. Remove the chicken from the pot, discard bones and skin.
  4. Return the cooked meat to the pot.
  5. Add chopped celery, green onions, tomato paste, salt, black pepper, parsley flakes, minced garlic, and chopped okra.
  6. Add 3 quarts of water to the pot.
  7. Bring to a boil, cover, reduce heat, and simmer for approximately 1 hour until vegetables are very tender.
  8. Brown the flour until dark brown in enough bacon drippings or oil to moisten (preferably in an iron skillet).
  9. Add enough broth from the pot to the browned flour to make a smooth, thick gravy.
  10. Add the gravy to the pot with the other ingredients.
  11. Adjust salt and pepper as needed.
  12. Cover and simmer for a few minutes before serving.
  13. Serve over rice.
