Eula'S Chicken Gumbo

Instructions
- Place the chicken in a large pot and cover with water.
- Bring to a boil and cook until the chicken is done.
- Remove the chicken from the pot, discard bones and skin.
- Return the cooked meat to the pot.
- Add chopped celery, green onions, tomato paste, salt, black pepper, parsley flakes, minced garlic, and chopped okra.
- Add 3 quarts of water to the pot.
- Bring to a boil, cover, reduce heat, and simmer for approximately 1 hour until vegetables are very tender.
- Brown the flour until dark brown in enough bacon drippings or oil to moisten (preferably in an iron skillet).
- Add enough broth from the pot to the browned flour to make a smooth, thick gravy.
- Add the gravy to the pot with the other ingredients.
- Adjust salt and pepper as needed.
- Cover and simmer for a few minutes before serving.
- Serve over rice.
