Ingredients

  • 8 c. cucumbers
  • 1 1/2 c. sliced onion
  • 4 tsp. salt
  • 2 c. water
  • 3/4 c. sugar
  • 1/2 c. vinegar
  • 1 tsp. celery seed

Instructions

  1. Cut cucumbers into 1/8-inch thick slices.
  2. Place the cucumber slices, sliced onions, salt, and water in a large bowl.
  3. Let stand for 2 hours, stirring occasionally.
  4. Drain the mixture, but do not rinse.
  5. Return the drained cucumbers and onions to the bowl.
  6. Add sugar, vinegar, and celery seed to the mixture.
  7. Let stand, stirring occasionally, until the sugar dissolves and covers the cucumbers.
  8. Pack the mixture into freezer containers, seal, and freeze.
  9. When ready to use, thaw the pickles and store in the refrigerator.
