Ingredients

  • 1 c. chopped ham
  • 1/4 c. chopped onion
  • 1/4 c. chopped green pepper
  • 1 c. grated American cheese
  • 1/4 c. cut-up mushrooms
  • 1/4 c. chopped tomatoes
  • 6 eggs
  • 1/4 c. milk

Instructions

  1. Saute chopped ham, onion, green pepper, and mushrooms in about 1 teaspoon of butter until tender.
  2. Beat eggs and milk together in a bowl.
  3. Heat a frying pan with enough oil to coat the bottom over medium heat.
  4. Reduce heat to low-medium and pour half of the beaten eggs into the pan, ensuring the eggs coat the entire surface.
  5. Add half of the grated American cheese and chopped tomatoes on one half of the eggs.
  6. Allow the cheese to melt and the eggs to cook, then add the cooked ingredients on top of the cheese and eggs.
  7. Place the remaining half of the eggs on top of the ingredients and cook until set.
  8. Fold the omelette if desired and serve hot.
  9. Repeat the process to make the second omelette.
