Ingredients

  • 6 medium potatoes
  • 1/4 cup melted butter
  • 2 cups grated Cheddar cheese
  • 3 cups sour cream
  • 1/3 cup chopped chives
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 tablespoons butter

Instructions

  1. Cook potatoes in skins until tender.
  2. Chill the potatoes until cool.
  3. Peel and grate the cooled potatoes into a casserole dish.
  4. Combine 1/4 cup melted butter, grated Cheddar cheese, chopped chives, salt, white pepper, and sour cream in a bowl.
  5. Blend the mixture well and pour over the grated potatoes.
  6. Gently stir to combine.
  7. Dot the top of the casserole with 2 tablespoons of butter.
  8. Sprinkle with paprika.
  9. Bake at 350°F (175°C) for 30 minutes until heated through and golden on top.
