Ingredients

  • 1 Tbsp. butter
  • 3 Tbsp. onion, minced
  • 1/4 cup bell pepper, chopped
  • 1 small garlic clove, minced
  • 1 cup milk
  • 2 big tomatoes, peeled and chopped
  • 1 bay leaf
  • 1/2 tsp. oregano
  • Salt and pepper to taste
  • 1 cup corn kernels
  • Parsley, minced
  • Croutons

Instructions

  1. In a soup pot, cook the onion, bell pepper, and garlic in butter until soft.
  2. Add milk, peeled and chopped tomatoes, herbs, salt, and pepper. Cover and bring to a gentle boil.
  3. Lower the heat and simmer for 1 minute.
  4. Discard the bay leaf.
  5. Add the corn kernels, reheat the soup, and season with salt to taste.
  6. Garnish with minced parsley and pass the croutons before serving.
