Fall Cake

- Peel and dice enough apples to make 4 cups.
- Mix the diced apples with 2 cups of sugar and let stand for 1 hour.
- Add 2 beaten eggs, 1 cup of oil, and 1 teaspoon of vanilla to the apple mixture.
- Sift together 3 cups of flour, 1/2 teaspoon of salt, and 2 teaspoons of baking soda, then add to the wet ingredients.
- Stir in 1 cup of black walnuts or English walnuts, mixing well but do not beat hard.
- Pour the batter into a greased and floured Bundt pan.
- Bake at 325°F (160°C) for 45 minutes or until a toothpick inserted into the center comes out clean.
