Ingredients

  • 4 cups apples
  • 2 cups sugar
  • 2 eggs
  • 1 cup oil
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 3 cups flour
  • 2 teaspoons baking soda
  • 1 cup black walnuts or English walnuts

Instructions

  1. Peel and dice enough apples to make 4 cups.
  2. Mix the diced apples with 2 cups of sugar and let stand for 1 hour.
  3. Add 2 beaten eggs, 1 cup of oil, and 1 teaspoon of vanilla to the apple mixture.
  4. Sift together 3 cups of flour, 1/2 teaspoon of salt, and 2 teaspoons of baking soda, then add to the wet ingredients.
  5. Stir in 1 cup of black walnuts or English walnuts, mixing well but do not beat hard.
  6. Pour the batter into a greased and floured Bundt pan.
  7. Bake at 325°F (160°C) for 45 minutes or until a toothpick inserted into the center comes out clean.
