Ingredients

  • 1 pkg. lemon Jell-O
  • 1 small can crushed pineapple, drained
  • 1/4 cup pineapple juice (reserved from pineapple can)
  • 1 cup cold water
  • 2 (3 oz.) packages mashed cream cheese
  • 2 pieces pimiento, cut fine
  • 3/4 cup chopped nuts

Instructions

  1. Add hot water to the reserved pineapple juice to make 1 cup, then pour into the Jell-O powder and mix.
  2. Add 1 cup cold water and mix thoroughly.
  3. When the Jell-O is partially hardened, beat until light.
  4. Add the cream cheese, finely cut pimientos, chopped nuts, and finely cut celery.
  5. Add the drained crushed pineapple.
  6. Fold in the whipped cream.
  7. Mold the mixture and let it set.
