Ingredients

  • 3 to 5 lb. chuck roast
  • 2 Tbsp. flour
  • salt and pepper to taste
  • fat (if needed)
  • 1 c. sliced onions
  • 1/2 c. water
  • 1/3 c. dry wine
  • 4 Tbsp. catsup
  • pinch of garlic powder
  • 1/4 tsp. dry mustard
  • generous pinch oregano

Instructions

  1. Dredge the chuck roast in seasoned flour.
  2. Brown the meat in hot fat, then drain excess drippings.
  3. Blend sliced onions with water, wine, catsup, garlic powder, dry mustard, and oregano.
  4. Add the onion mixture to the meat in a covered pot.
  5. Simmer for 2 to 3 hours or until the meat is tender, adding liquid as needed.
  6. Add mushrooms just prior to serving.
