Ingredients

  • 8 medium baking potatoes
  • 2 Tbsp. melted margarine
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • chopped parsley
  • 1/2 tsp. Italian seasoning (optional)

Instructions

  1. Peel the potatoes and slice 1/4 inch thick without cutting all the way through; keep the slices attached at the bottom. Place the potatoes in a bowl of cold water.
  2. Spray an 11 x 7-inch baking pan with cooking spray (Pam). Arrange the sliced potatoes in the pan with the cut side up.
  3. Brush the potatoes with melted margarine.
  4. Sprinkle with salt, pepper, and Italian seasoning (if using).
  5. Preheat the oven to 325°F. Bake the potatoes for 40 minutes.
  6. Baste the potatoes with margarine during baking.
  7. Increase oven temperature to 450°F and bake for an additional 20 minutes, testing for doneness.
  8. Garnish with chopped parsley before serving if desired.
