- Peel the potatoes and slice 1/4 inch thick without cutting all the way through; keep the slices attached at the bottom. Place the potatoes in a bowl of cold water.
- Spray an 11 x 7-inch baking pan with cooking spray (Pam). Arrange the sliced potatoes in the pan with the cut side up.
- Brush the potatoes with melted margarine.
- Sprinkle with salt, pepper, and Italian seasoning (if using).
- Preheat the oven to 325°F. Bake the potatoes for 40 minutes.
- Baste the potatoes with margarine during baking.
- Increase oven temperature to 450°F and bake for an additional 20 minutes, testing for doneness.
- Garnish with chopped parsley before serving if desired.
