Ingredients

  • 2 lb. ground round or ground chuck
  • 3/4 c. onion, chopped fine
  • 3/4 c. green pepper, chopped fine
  • 3/4 c. celery, chopped fine
  • 1 small carrot
  • 2 radishes (optional)
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. seasoning salt
  • 1/4 tsp. garlic salt
  • 1/4 tsp. celery salt
  • 1/8 tsp. Tabasco sauce
  • 1/4 tsp. Worcestershire sauce
  • 1 Tbsp. jalapeno relish

Instructions

  1. Tell the butcher to grind the round or chuck for tiger meat and do not season.
  2. Combine all the ingredients together in a mixing bowl.
  3. Mix well until thoroughly combined.
  4. Roll the mixture into a ball-like meatloaf shape.
  5. Wrap the meatloaf in plastic wrap, then in foil.
  6. Let stand in the refrigerator for 12 to 24 hours before serving.
