  3. Soften yeast and 1 tablespoon sugar in 3/4 cup of milk, then pour into the well.
  4. Let stand in the well until foamy, then add remaining sugar and melted fat.
  5. Work ingredients into a dough, adding a little more flour if necessary.
  6. Cover and let rise in a warm place until light.
  7. Turn onto a floured board and roll about half an inch thick.
  8. Cut into diamonds or squares and let stand on the board until very light.
  9. If the kitchen is very warm, this rising process will not take too long.
