Ingredients

  • 3/4 cup sugar
  • 1 teaspoon salt
  • 1/2 cup butter
  • 1 1/4 cup milk
  • 2 packets active yeast
  • 5 1/2 cups flour
  • 4 eggs
  • 1 teaspoon orange rind
  • 1 teaspoon lemon rind
  • 1/2 teaspoon cardamom
  • 1/2 cup almonds
  • 1 cup raisins

Instructions

  1. Scald the milk and add sugar and butter.
  2. Allow the mixture to cool.
  3. Dissolve the yeast in a little of the warm milk mixture, then add to the remaining milk mixture.
  4. Add half of the flour and beat well.
  5. Beat the eggs until thick and add salt, then incorporate into the mixture.
  6. Add the remaining flour, orange rind, and lemon rind, and mix well.
  7. Knead the dough for 15 minutes.
  8. Add the chopped raisins and almonds to the dough.
  9. If the dough is sticky, add more flour.
  10. Cover the dough and let it rise in a greased bowl until doubled in size.
