Ingredients

  • 2 slices fat-free bread
  • 6 asparagus spears
  • or 1 medium tomato
  • 2 or 3 egg whites
  • 1 c. water
  • 1/4 tsp. salt

Instructions

  1. Put water and salt in a small frypan and bring to a boil.
  2. Add egg whites to the boiling water and poach until firm.
  3. Heat the asparagus or tomato slices.
  4. Place the cooked egg whites on the toasted, fat-free bread.
  5. Cover with the heated asparagus or tomato slices.
  6. Season with pepper and enjoy!
