- Combine the thawed and drained vegetables, mushroom soup, 1/2 cup shredded Swiss cheese, sour cream, black pepper, drained pimentos, and 1/2 cup French fried onion rings in a bowl.
- Pour the mixture into a greased casserole dish.
- Cover and bake at 350°F for 30 minutes.
- Remove from oven, sprinkle with the remaining shredded Swiss cheese and French fried onion rings.
- Bake uncovered for an additional 5 minutes until cheese melts and topping is crispy.
