A creamy, cheesy vegetable casserole with Swiss cheese, pimentos, and crispy onion topping, perfect for family dinners or holiday gatherings with comforting flavors.

Ingredients

  • 16 oz. frozen broccoli, cauliflower and carrots
  • 10 1/3 oz. can mushroom soup
  • 1 cup shredded Swiss cheese
  • 1/3 cup sour cream
  • 1/4 tsp. black pepper
  • 4 oz. jar pimento, drained
  • 2.8 oz. can French fried onion rings

Instructions

  1. Combine the thawed and drained vegetables, mushroom soup, 1/2 cup shredded Swiss cheese, sour cream, black pepper, drained pimentos, and 1/2 cup French fried onion rings in a bowl.
  2. Pour the mixture into a greased casserole dish.
  3. Cover and bake at 350°F for 30 minutes.
  4. Remove from oven, sprinkle with the remaining shredded Swiss cheese and French fried onion rings.
  5. Bake uncovered for an additional 5 minutes until cheese melts and topping is crispy.
