Fat-Free Butterscotch Crisps

- Combine the reduced fat margarine or light butter, sugar, fat-free egg substitute, molasses, and vanilla extract in a bowl and process until smooth.
- In a separate bowl, mix the whole wheat flour and baking soda. Add this to the margarine mixture and process to combine well.
- Stir in the butterscotch chips and Grape-Nuts cereal until evenly distributed.
- Preheat the oven to 300°F and coat a baking sheet with nonstick cooking spray.
- Drop rounded teaspoonfuls of dough onto the prepared baking sheet, spacing them 1 1/2 inches apart.
- Bake for about 16 minutes or until golden brown.
- Cool the cookies on the pan for 1 minute, then transfer to wire racks and cool completely.
- Serve immediately or store in an airtight container.
