Ingredients

  • 4 cups rinsed pinto beans
  • 1 chopped onion
  • 1 chopped clove garlic
  • 1/2 teaspoon chili powder

Instructions

  1. Drain the soaked pinto beans.
  2. Cover the beans with water in a pot.
  3. Add chopped onion, garlic, and chili powder to the beans.
  4. Simmer until the beans are very tender, stirring occasionally and adding water if needed.
  5. The mixture should be thick and soupy.
  6. Add salt to taste.
  7. Blend with a hand blender until fairly smooth, with some whole beans remaining.
  8. Cook further if necessary to thicken.
  9. Refrigerate or freeze before serving.
