Ingredients

  • 2 (3 oz.) boxes jello (strawberry or concord grape)
  • 1 (20 oz.) can Dole crushed pineapple
  • 1 cup chopped nuts
  • 8 oz. cream cheese
  • 1 1/2 oz. Dream Whip
  • 3/4 cup sugar
  • 2 tablespoons flour
  • 2 eggs
  • 2 tablespoons lemon juice

Instructions

  1. Mix the jello with 3/4 cup cold water according to package directions and pour into a 3-quart oblong Pyrex dish. Congeal until soft-stage.
  2. Drain the crushed pineapple, reserving the juice.
  3. Mix the pineapple with the prepared jello and sprinkle with chopped nuts. Congeal until firm.
  4. Soften the cream cheese and beat it with Dream Whip until well blended.
  5. Spread the cream cheese mixture over the jello layer and chill for several hours.
  6. In a saucepan, cook the pineapple juice, sugar, flour, beaten eggs, and lemon juice until thick, stirring constantly on low heat.
  7. Remove from heat and let it cool completely.
  8. Spread the cooled pineapple sauce over the cream cheese layer before serving.
