Ingredients

  • 1 1/2 lb. fresh or frozen halibut fillets
  • 12 medium onions
  • 4 to 5 medium potatoes
  • 1/4 cup butter or margarine
  • 3 tablespoons butter
  • 4 teaspoons salt
  • 1/2 teaspoon pepper
  • 3 cups boiling water
  • 1 quart milk

Instructions

  1. Cut the halibut fillets into 2 to 3 pieces.
  2. In a heavy skillet, sauté the onions in 1/4 cup butter until golden brown, about 20 minutes.
  3. Add the chopped potatoes, salt, pepper, and boiling water to the skillet.
  4. Arrange the fish fillets on top of the vegetables.
  5. Cover and simmer for about 30 minutes or until the vegetables are tender.
  6. Add the scalded milk, light cream, and 3 tablespoons of butter to the skillet.
  7. Heat until the chowder is very hot.
  8. Slice a tomato and float it on top of the chowder before serving.
