Favorite Fishermans Chowder

- Cut the halibut fillets into 2 to 3 pieces.
- In a heavy skillet, sauté the onions in 1/4 cup butter until golden brown, about 20 minutes.
- Add the chopped potatoes, salt, pepper, and boiling water to the skillet.
- Arrange the fish fillets on top of the vegetables.
- Cover and simmer for about 30 minutes or until the vegetables are tender.
- Add the scalded milk, light cream, and 3 tablespoons of butter to the skillet.
- Heat until the chowder is very hot.
- Slice a tomato and float it on top of the chowder before serving.
