Ingredients

  • 1 unbaked 9-inch pastry shell
  • 3 eggs
  • 1 cup sugar
  • 1 cup light corn syrup
  • 2 tablespoons melted butter or margarine
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • about 1 1/2 to 2 cups pecan halves

Instructions

  1. Prick the bottom and sides of the pastry shell; bake at 400°F for 5 minutes.
  2. Set the pastry shell aside to cool.
  3. Beat eggs until light and lemon colored; add sugar and corn syrup, beating until fluffy.
  4. Add melted butter or margarine, salt, and vanilla; stir well.
  5. Pour the filling into the cooled pastry shell.
  6. Top with pecan halves.
  7. Bake at 300°F for 1 hour and 45 minutes or until the center is firm.
