- Cook the frozen broccoli in the microwave as directed on the package, then drain.
- Beat the eggs in a large bowl.

- Stir in the Jiffy cornbread mix until combined.
- Add the drained broccoli and grated cheddar cheese to the mixture and mix well.
- Pour the mixture into a 13 x 9 x 2-inch sprayed baking pan.
- Bake at 350°F for 35 to 40 minutes until golden and cooked through.
