Ingredients

  • 1 1/2 sticks oleo
  • 1 large box frozen broccoli
  • 1 lb grated Cheddar cheese
  • 2 boxes Jiffy cornbread mix
  • 6 eggs
  • 1 medium onion

Instructions

  1. Saute the chopped onion in oleo until translucent, then cook until done but not browned.
  2. Cook the frozen broccoli in the microwave as directed on the package, then drain.
  3. Beat the eggs in a large bowl.
  4. Add the cooked onion and oleo to the eggs and mix well.
  5. Stir in the Jiffy cornbread mix until combined.
  6. Add the drained broccoli and grated cheddar cheese to the mixture and mix well.
  7. Pour the mixture into a 13 x 9 x 2-inch sprayed baking pan.
  8. Bake at 350°F for 35 to 40 minutes until golden and cooked through.
