Fern'S Spinach Noodle Pudding

A creamy spinach noodle pudding with tender noodles, sautéed onion and garlic, topped with Parmesan, perfect for family dinners or comforting gatherings.

Ingredients

  • 8 oz. wide noodles
  • 10 oz. frozen spinach
  • 1 small onion
  • 3 cloves garlic
  • 6 Tbsp. butter
  • 3 eggs
  • 1 c. sour cream
  • salt and pepper to taste
  • 3 Tbsp. Parmesan cheese

Instructions

  1. Combine all ingredients except Parmesan cheese and mix well.
  2. Spread the mixture in an oiled 13 x 9-inch baking dish.
  3. Bake at 350°F (175°C) for 1 hour.
  4. Remove from oven, cut into squares, and sprinkle with Parmesan cheese before serving.
