Ingredients

  • 2 cups sugar
  • 2/3 cup evaporated milk
  • 12 marshmallows
  • 1/2 cup butter or margarine
  • a few grains salt
  • 6 ounces semi-sweet chocolate pieces
  • 1 cup nuts
  • 1 teaspoon vanilla

Instructions

  1. Mix in a saucepan the sugar, evaporated milk, marshmallows, butter or margarine, and a few grains of salt.
  2. Cook, stirring constantly over medium heat, until the mixture comes to a boil and is bubbling all over the top.
  3. Boil and stir for 5 minutes more, then remove from heat.
  4. Add the semi-sweet chocolate pieces to the mixture.
  5. Stir until the chocolate is completely melted and smooth.
  6. Stir in the nuts and vanilla extract.
  7. Spread the mixture in an 8-inch square pan that has been buttered.
  8. Allow to cool and then cut into 30 pieces.

Tips & Substitutions

For a creamier fudge, consider substituting the semi-sweet chocolate with dark chocolate or incorporating a splash of heavy cream for richness. If you need a nut-free version, omit the nuts or substitute with seeds like sunflower or pumpkin seeds. Stirring constantly is crucial to prevent burning, so keep a close eye on the mixture while it cooks. This fudge pairs well with a warm cup of Creamed Broccoli Soup.

Serving Suggestions

Cut the fudge into small squares and serve it on a festive platter for parties or holiday gatherings. It pairs wonderfully with coffee or hot chocolate, making it a delightful treat during winter months. For a fun twist, serve alongside Caramel Brownie Tarts for a decadent dessert table that will impress your guests.

Storage & Reheating

Store leftover fudge in an airtight container at room temperature for up to one week. If you live in a hot climate, refrigerate to maintain its shape. To enjoy it again, allow it to come to room temperature for a few minutes or warm slightly in the microwave for a gooey texture.

Frequently Asked Questions

Can I use a different type of chocolate for this fudge?

Absolutely! You can use milk chocolate or even white chocolate for a different flavor profile. Just keep in mind that the sweetness level may vary, so adjust the sugar if necessary. Each chocolate will impart a unique taste to the fudge, so feel free to experiment.

How do I know when the fudge is ready?

The fudge is ready when it has boiled for 5 minutes and has thickened slightly. You can also perform a soft ball test: drop a small amount of the mixture into cold water; if it forms a soft ball that holds its shape, it’s ready to be removed from the heat.

Can I add flavors like mint or orange to the fudge?

Yes! You can enhance the fudge by adding a teaspoon of peppermint extract or orange zest along with the vanilla. This will give your fudge a refreshing twist, perfect for festive occasions or holiday parties.
