Ingredients

  • 4 cups thinly sliced onions
  • 2 tablespoons butter
  • 1 cup half and half or light cream
  • dash of salt and pepper
  • 1/3 cup grated Parmesan cheese
  • 2 eggs

Instructions

  1. Melt butter in a large saucepan.
  2. Stir in sliced onions.
  3. Cook, covered on medium low heat for 8 to 10 minutes or until tender and golden, stirring constantly.
  4. Divide onions evenly among 6 (6 ounce) individual casserole or custard cups.
  5. Beat eggs until light.
  6. Stir in half and half, salt, and pepper.
  7. Pour the egg mixture atop the onions or place in an 8 x 8 x 2-inch baking dish and pour mixture over.
  8. Bake in a 350°F oven for 15 minutes or until the mixture is set (allow 15 to 20 minutes for onions in baking dish).
  9. Sprinkle with Parmesan cheese during the last 5 minutes of baking.
