Ingredients

  • 2 (10 1/2 oz.) cans chicken broth
  • 1 cup converted rice
  • 6 tablespoons butter-flavor sprinkles
  • 1 1/2 cups small broccoli florettes
  • 2/3 cup cross cut carrots sliced
  • 1 1/2 cups red bell pepper julienne cut
  • 3 tablespoons fresh parsley minced
  • Freshly ground black pepper

Instructions

  1. In a medium (2 qt.) saucepan, bring chicken broth to a boil.
  2. Add rice, reduce heat to medium-low, cover, and simmer for 10 minutes.
  3. Stir in butter-flavor sprinkles and all vegetables.
  4. Cover and continue simmering for 10 minutes.
  5. Remove from heat and let stand for 5 minutes or until all water is absorbed.
  6. Sprinkle the top with butter sprinkles and black pepper.
  7. Fluff with a fork before serving.
