Fiesta Chicken Rolls are flavorful, tender chicken breasts filled with cheesy seasoned mixture, rolled, coated in crumb mixture, and baked to perfection—ideal for a hearty, satisfying meal.

Ingredients

  • 3 whole chicken breasts
  • 3 Tbsp. butter or margarine
  • 3 Tbsp. Cheddar cheese spread
  • 2 tsp. minced onion
  • 1 tsp. salt
  • 3 Tbsp. margarine
  • 1 c. Cheddar cheese cracker crumbs
  • 1 packet taco seasoning mix

Instructions

  1. Pound each raw chicken piece with a meat hammer to flatten.
  2. Mix 3 tablespoons butter and cheese spread until well blended. Add minced onion and salt.
  3. Divide the mixture equally onto the 6 flattened chicken pieces, placing a portion at one end of each piece.
  4. Roll up the chicken, tucking in the ends to enclose the filling. Fasten with wooden toothpicks or tie with string.
  5. Melt 3 tablespoons butter in a 1 1/2-quart glass dish in the microwave oven.
  6. Coat each chicken roll with the melted butter.
  7. Mix the Cheddar cheese cracker crumbs and taco seasoning together.
  8. Roll the butter-coated chicken in the crumb mixture to cover completely.
  9. Arrange the coated chicken rolls in a baking dish.
  10. Bake at 350°F (175°C) for 45 minutes.
