Ingredients

  • 1 lb boneless loin
  • sliced onion
  • 2 tsp taco seasoning
  • salsa
  • beans
  • 1 tsp vegetable oil
  • 11 oz can drained corn
  • flour tortillas

Instructions

  1. Cut the boneless loin into strips.
  2. Stir-fry the pork strips with vegetable oil and sliced onion until cooked.
  3. Add the drained corn to the stir-fry and cook for a few minutes.
  4. Toss the mixture with taco seasoning to coat evenly.
  5. Warm the flour tortillas.
  6. Spoon the pork and corn mixture onto each tortilla, roll up tightly.
  7. Serve the burritos with salsa, rice, and beans on the side.
