Ingredients

  • pastry for 2 crust pie
  • 1 Tbsp. flour
  • 1 Tbsp. sugar
  • 1 (1 lb.) can sour cherries
  • 1 c. sugar
  • 1/4 c. flour
  • 1/8 tsp. salt
  • 1/4 tsp. almond extract

Instructions

  1. Line a 9-inch pan with pastry.
  2. Sprinkle the pastry with one tablespoon flour and one tablespoon sugar.
  3. Drain cherries, saving the juice.
  4. Combine sugar, flour, and salt in a bowl.
  5. Gradually stir in cherry juice, then add almond extract and lemon juice.
  6. Mix the cherry juice mixture with the cherries.
  7. Pour the cherry filling into the pastry-lined pan.
  8. Dot the filling with butter.
  9. Place the top crust over the filling and seal the edges.
  10. Bake in a 425°F oven for 30 to 35 minutes until golden.
