Finnish Baked Apples

Ingredients

  • 4 apples
  • 1 ounce butter
  • 4 teaspoons superfine sugar
  • 1 egg white
  • 8 tablespoons apricot preserves
  • 4 tablespoons Cointreau liqueur

Instructions

  1. Preheat the oven to 350F.
  2. Wash dry and core the apples.
  3. If necessary, cut a slice off the bottom of each apple so it stands up.
  4. Place the apples in a greased ovenproof dish, dot with butter, sprinkle with 3 teaspoons of the sugar and bake for 20 minutes.
  5. Meanwhile, whisk the egg whites with the remaining sugar until very stiff.
  6. Fill the apples with the apricot preserves, pour 1 tbsp of Cointreau over each apple and top with the egg white.
  7. Return to the oven until golden brown.
  8. Serve immediately.
