Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 1/2 teaspoons cinnamon
  • 3/4 cup chopped pecans or walnuts
  • 3 eggs
  • 2 cups sugar
  • 3/4 cup vegetable oil
  • 2 teaspoons vanilla
  • 1 (8 oz.) can crushed pineapple
  • 2 cups shredded fruit or vegetable

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, salt, baking powder, and cinnamon.
  3. Add the chopped pecans or walnuts to the dry ingredients and stir to combine.
  4. In a separate bowl, beat the eggs. Add sugar, vegetable oil, and vanilla, mixing well.
  5. Stir in the crushed pineapple and shredded fruit or vegetable until evenly incorporated.
  6. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for approximately 60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
