All Season Bread

Ingredients
- 3 cups all-purpose flour ⓘ
- 2 teaspoons baking soda ⓘ
- 1 teaspoon salt ⓘ
- 1/2 teaspoon baking powder ⓘ
- 1 1/2 teaspoons cinnamon ⓘ
- 3/4 cup chopped pecans or walnuts ⓘ
- 3 eggs ⓘ
- 2 cups sugar ⓘ
- 3/4 cup vegetable oil ⓘ
- 2 teaspoons vanilla ⓘ
- 1 (8 oz.) can crushed pineapple ⓘ
- 2 cups shredded fruit or vegetable ⓘ
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a large bowl, whisk together the flour, baking soda, salt, baking powder, and cinnamon.
- Add the chopped pecans or walnuts to the dry ingredients and stir to combine.
- In a separate bowl, beat the eggs. Add sugar, vegetable oil, and vanilla, mixing well.
- Stir in the crushed pineapple and shredded fruit or vegetable until evenly incorporated.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Pour the batter into the prepared loaf pan.
- Bake for approximately 60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
